The kitchen turns out grilled octopus carrying a smoky char, balanced ceviche, and a comforting Colombian corn cake. Plant-based diners get their own dedicated menu rather than afterthoughts, anchored by potato mille-feuille and labneh with wood-fired potato bread. Servers pace the shared plates with sommelier wine picks before guests drift up to the third-floor rooftop for drinks and crispy churros dipped in dulce de leche—the leisurely sobremesa to wrap up the night.
