A day's advance notice unlocks the kitchen's signature slow-roasted duck—packed with aromatic Balinese spices and carved tender beneath crisp skin. Meals start with complimentary baskets of prawn crackers and wind down with chilled slices of pineapple and a parting pour of house arak.
