The kitchen avoids heavy American-style shortcuts, relying instead on scratch-made pastas and sourdough Neapolitan crusts fermented over three days from a 15-year mother yeast. Diners point to bowls of Linguini di Mare tossed with fresh seafood, wood-fired pies with house-made nduja, and glasses poured with pairing notes from the chef, finishing casually on limoncello cheesecake.
