Descend beneath Uluwatu to dine inside a 25,000-year-old limestone cavern capped at just twenty-two seats. Natural stalactites frame the room while Chef Ryan Clift orchestrates modern multi-course degustation menus—think Hokkaido scallops dressed in ajo blanco and braised short rib alongside rich milk bread with curry butter. Between plates, light projections ripple across the subterranean ceiling, punctuated by an intermission where diners strap on headlamps and hard hats to explore the deep rock formations.
