Bali’s first aquarium restaurant serves multi-course tasting menus wrapped in a glass tunnel beneath gliding stingrays and reef sharks. Deep inside the Apurva Kempinski—give yourself a good fifteen minutes to walk from the resort drop-off—the subaquatic dining room pairs aquatic spectacle with Balinese keramahtamahan. Expect attentive hospitality where staff switch out nut allergens without a hitch and bring off-menu ginger tea at the sound of a cough. The kitchen sends out six- to eight-course progressions featuring lobster over pearl couscous, cod, and wagyu, alongside diver greetings right through the glass.
