Will Goldfarb’s Ubud outpost flips fine dining on its head with an experimental 15-course degustation centered on desserts. Guests migrate through three distinct settings over the course of the meal—shifting from savory snacks at the back terrace bar to plated sweets in the main room, then winding down around an outdoor bonfire. Botanical harvests from the on-site kebun shape each plate, balancing savory cod against tart mulberry punch alongside synchronized cocktail or spiritless pairings. mid-service, Goldfarb works the floor in shorts and Crocs, chatting with tables between courses before guests head over to The Powder Room for Crème Brûlée Bomboloni.

    The 15-course menu takes guests across three dedicated environments—from savory snacks on the back terrace to plated dessert mains in the dining room and petit fours by the outdoor garden bonfire.

    The dinner is divided in three different areas with three different styles of dishes, starting with few little tastes of savoury and moving to the “mains” desserts to finish with few little bites on the outdoor table in front of the bonfire.

    Desserts were amazing and mocktail and wine pairing each was in symphony with the dishes. Great notes complementing the dishes and dishes with the drinks - excellent curation of the meal.

    The multi-room culinary flow operates without rushing or stress, allowing guests to comfortably transition across 15 intricate dishes at an unhurried, grounded cadence.

    At no point did we feel like we had to wait for anything but we never once felt rushed. We particularly enjoyed that none of the staff seemed stressed or under pressure, the atmosphere was very cool, calm, relaxed, and grounded.
