High over the Ayung River gorge, Ambar claims Ubud’s dramatic golden hour perch—canopy views, infinity water, and botanical drinks in hand. Regulars plan their arrival around senja—twilight—watching the valley drop into shadow. Behind the bar, infusions draw from local medicinal recipes alongside fresh guava pours and house vermouth. The food holds its own against the scenery: red snapper sashimi, seared Wagyu, and tuna tartare mixed tableside with freshly grated wasabi. As dusk settles, live jazz fills the pavilion while staff discreetly send out celebratory plates of strawberry mochi.
